PITO was recently invited to attend the Chef Days Show International Chefs Forum in Astana, Cazaquistão. The event brought together chefs, restaurant brands, and industry professionals from different countries and regions to exchange ideas on global culinary culture, brand development, and international collaboration.

Durante o fórum, Senhor. Xu Hongsheng of PITO delivered a keynote presentation titled From Chaozhou to Naples: The Next Decade of Chinese Dining. Drawing on the culinary heritage of Chaozhou, China, and the development of the Italian pizza brand +39 in the Chinese market, he shared his perspectives on China’s dining industry and cross-cultural culinary exchange.
From Chaozhou to Naples: A Dialogue Between Culinary Traditions
Chaozhou is a city with a rich culinary heritage and distinctive regional food culture. Em 2023, it was designated a UNESCO Creative City of Gastronomy, further highlighting its role in international culinary exchange.

In his presentation, Senhor. Xu explored the connection between regional food traditions and the modern dining market in China. He also introduced the experience of +39, a Neapolitan pizza brand bringing traditional Italian pizza culture to Chinese consumers.

By staying true to the principles of traditional Neapolitan pizza while responding to local market preferences, +39 offers an example of how international restaurant brands can preserve their culinary identity while building connections with new markets.
From Chaozhou Gongfu tea to Neapolitan espresso, these two traditions may be thousands of kilometres apart, yet both reflect a deep appreciation for craftsmanship, time, and flavour. Such shared values create meaningful connections between culinary cultures around the world.
